Cherry Rolled Pork Recipe

Yes, my husband is a little nuts. And that's why I love him! Sometimes his crazy recipe ideas turn into something nearly INEDIBLE to quote Alex Guarnaschelli from one of my favorite shows: Chopped. And sometimes they are mouth-watering works of creative genius. This is definitely the latter...

Ingredients
1/4 cup dried cherries
1/4 cup yellow raisins
1/4 cup black walnuts, chopped
1/4 cup real bacon bits
3 tbsp butter
1 cup marsala wine
1 cup cooking sherry
3/4 of 1lb. unseasoned pork tenderloin

Directions
Melt butter in pan. Add cherries, raisins, walnuts and bacon. Bring to a boil and cook until ingredients are moistened. Scoop out solids, leave liquid in pan. Add marsala and sherry to pan and simmer. This will be your sauce to serve with the pork loin when it's done.

Pound pork loin flat. Slice length-wise and open like a hot dog bun. Add moistened ingredient where the hot dog would go. Roll pork loin shut with 1/2" overlap. Bake at 350˚ until pork is 160˚ about 35-45 mins.
