<strong>Oldies but goodies though!</strong> All of our same recipes are now on Mighty Mrs. and I will continue posting new recipes as we test and perfect them. So why did I rename and redesign? Here's why:

<li>I want a name and a site that has a little more personality so that people can get to know me and all my mightiness and I'll even share with you all of my flaws (OK, some) — ain't no Martha Stewart here.</li>
<li>I want to provide a glimpse into the behind-the-scenes effort that goes into this recipe blog. It's a lot of fun and it's a lot of work. I want you to see the whole process.</li>
<li>You can now rate every recipe on a 5-star scale.</li>
<li>It's easier to find recipes with an improved search bar and simpler site navigation.</li>
<li>It's mobile and tablet friendly. This will be helpful for cooking, grocery shopping and Pinning!</li>
<li>You can now easily print your favorite recipes. Keep a binder of your favorite ones!</li>
<li>Eventually I'd like to open a little online shop with some cute and one-of-a-kind items to make cooking more fun. Because aside from the dirtying dishes, cooking should actually be enjoyable. Especially if you add wine.</li>
<li>More recipe details: cook & prep time, how easy or hard the dish is to make and reviews by others who have made the dish.</li>
<li>The ads — I decided I do want to have ads on my site. I try to keep them as out-of-the-way as possible and I even selected ad categories that I think will be appealing to you all. Some spam does get through from time to time but I even try to monitor that to keep it to a minimum. I do make an average of $30-50/month off of them. I hope that will increase over time as I get more visitors and get accepted into better ad networks. I plan to keep everyone posted about that because in addition to sharing my favorite recipes, I also want to be a resource to others looking to start their own blog. I love the fresh, exotic taste of this dish. Using ground turkey makes it refreshingly healthy and it's quick enough to make on a weeknight. This year I'm growing mint, parsley, chives, basil and thyme. I love growing herbs and finding new ways of using them. I came across <a href="http://myhalalkitchen.com/ground-turkey-with-potatoes-tomatoes-mint-parsley/" target="_blank">this</a> excellent recipe from My Hala Kitchen after doing a search for "turkey mint parsley" which is what I had on hand. I was pretty excited when the dish ended up tasting so good and the hubs and kids actually liked it too. I was able to put a little spin on it, borrowing some flavors from other recipes I've tried, by adding lime juice and feta cheese. Since not all recipes I try are good, I was glad this one was a success so I can now add it to the dinner line up. I'm really trying to branch out here and this was a good step in a new flavor direction! <br />
<br />
<b>Ingredients </b><br />
4 tbsp grape seed oil<br />
4 large potatoes, diced<br />
1 onion, diced<br />
1 tbsp minced garlic<br />
1 (14.5oz) can diced tomatoes<br />
1 lb ground turkey<br />
1 tablespoon smoked paprika<br />
Salt and pepper to taste<br />
1 tbsp lime juice <br />
2 tbsp fresh mint, chiffonade<br />
1/4 cup fresh parsley, chiffonade<br />
1/4 cup feta cheese <br />
<br />
<b>Directions</b><br />
1. Boil potatoes until soft then transfer to heated skillet with 1 tbsp oil and cook over medium/high heat until golden brown.<br />
<br />
2. In another skillet, sauté onion and garlic in remaining oil over medium/low heat until softened. Stir in diced tomatoes. Add ground turkey, breaking up into small pieces. Cook turkey until slightly browned. Stir in paprika, salt, pepper and lime juice. <br />
<br />
3. Gently fold in crisped potatoes, mint and parsley. Serve topped with crumbled feta cheese.<br />

You won't believe me until you've tried this recipe for yourself, but I'm telling you I've discovered the secret to baking perfect chocolate chip cookies from scratch. I'm talking perfectly tanned bottoms, moist and chewy from top to bottom and the perfect balance of fluff and richness. So, want to know just what it is that makes a perfect batch of chocolate chip cookies? Well, I'll give you a hint. It's not melted butter. And it's not sour cream, although that's something I might try because it sounds interesting. Ready for it? Here's the big secret: Corn syrup. That's it! It truly is a magic ingredient that took me years to learn about. Apparently it's cookie baking's best kept secret. Oh, and do NOT get it confused with high fructose corn syrup and go running for the hills. Just plain old corn syrup. 0 grams of fat and 10 grams of sugar per 2 tablespoons. So there you have it. Now try it for yourself:<br />

<b>Ingredients </b><br />
2 sticks of butter, softened<br />
1/2 cup sugar<br />
3/4 cup packed light brown sugar<br />
1/4 cup light corn syrup<br />
1 egg<br />
2 tsp vanilla<br />
1 1/4 cup white flour<br />
1 cup whole wheat flour<br />
1 tsp baking soda<br />
1/2 tsp salt<br />
1/4 tsp nutmeg <br />
1 (10 oz.) package dark chocolate chips<br />
1/2 cup pecans (optional) <br />
<br />
<b>Directions</b><br />
1. Mix butter and two sugars together. Add corn syrup, egg and vanilla.<br />
<br />
2. In a separate bowl, mix together flours, baking soda, salt and nutmeg. Add this to the butter and sugar mixture.<br />
<br />
3. Add chocolate chips (and pecans if desired). <br />
<br />
4. Spoon onto baking sheet covered with parchment paper and bake at 350˚ for 10-12 minutes or until middle is just set. Remove from oven and let cool.<br />

Yield: 3 dozen perfect chocolate chip cookies!

Here's a really easy to make, tasty Thai dish. Since the hubs is allergic to peanuts, I actually used soy butter instead of peanut butter and it tasted fantastic. I think its so flavorful, you really don't notice when you're not actually using peanut butter. So it's a great peanut-free Thai dish to make that tastes like the real deal! Since this is something they can't eat at restaurants, treat your friends with peanut allergies to this dish and they'll love you forever.<br />
<br />
<b>Ingredients</b><br />
2 cups chicken broth<br />
1 (14.5oz) can coconut milk<br />
2 tbsp brown sugar<br />
1 tbsp minced garlic<br />
1 tsp cayenne pepper<br />
1/2 tsp ginger powder<br />
3 tbsp red curry paste<br />
2 tbsp fish sauce<br />
3 tbsp soy butter<br />
1/2 lime, juiced<br />
2lbs cooked chicken breasts<br />
1 onion, chopped<br />
1 (12oz) jar roasted red peppers<br />
1 cup peas<br />
<br />
<b>Directions</b><br />
1. Place all ingredients into crockpot. Stir gently until well mixed.<br />

2. Cook on low for 2 hours, stirring occasionally.<br />

Shrimp and Grits has long been a favorite southern dish. It's comfort food at its finest. But comfort food is really more of a winter thing. So, since it's spring, I decided to try adding a little tropical flavor. To my delight, this little experiment came out quite good. The pineapples and tomatoes give this southern classic a fun and summery twist.<br />
<br />
<b>Ingredients</b><br />
1lb package bacon<br />
1 (8oz) can crush pineapples<br />
1 (14.5oz) can diced tomatoes<br />
1 onion, diced<br />
1 tbsp minced garlic<br />
2 tbsp butter<br />
1 cup dried grits<br />
1 cup shredded mozzarella<br />
1 tsp salt<br />
5lbs raw shrimp<br />
Barbecue sauce<br />
<br />
<b>Directions</b><br />
1. Spread out bacon on a large, greased piece of foil and grill for 15 minutes or until nice and crispy. Remove and crumble. Add shrimp to remaining bacon fat and grill for about 6-8 minutes or until grey color has turned white.<br />
<br />
2. In a skillet over medium heat, sauté the onions in butter until translucent. Add garlic and sauté for a minute then stir in crushed pineapples and tomatoes and keep heated on low until ready to serve.<br />
<br />
3. In a microwavable large bowl, prepare grits using the microwave as directed on the package. Stir in cheese and salt.<br />
<br />
4. Spoon grits onto a plate and layer with tomato pineapple sauce, crumbled bacon bits and shrimp. Top with barbecue sauce and serve.<br />
<br />
Serves: 4-6

1 bunch fresh parsley, finely chopped<br />
8 green onions, finely chopped<br />
2 lemons, juiced<br />
1/4 cup olive oil<br />
1 tbsp red wine vinegar <br />
2 tbsp butter, melted<br />
1 tbsp minced garlic<br />
2 tbsp dried basil<br />
2 tbsp dried mint<br />
1/2 tsp salt<br />
1/2 cup bulgur or cous cous, cooked<br />
<br />
<b>Baked Pita Chips </b><br />
2 pita pockets<br />
2 tbsp butter, melted<b></b><br />
1/4 tsp basil<br />
<br />
<b>Directions:</b><br />
1. Prepare 1/2 cup (dried) bulgar or cous cous as directed on package. Cool in refrigerator. <br />
<br />
2. Slice grape tomatoes into quarters and place in large bowl. Add parsley and green onions. Stir in lemon juice, olive oil, red wine vinegar, butter, garlic, basil, mint and salt.<br />
<br />
3. Add cooled bulgar or couscous and toss.<br />
<br />
4. Slice pita pockets into bite-sized triangular pieces, separating layers. Dip in melted butter and place on baking sheet. Sprinkle with basil and toast or bake until golden brown. Serve tabbouleh topped with baked pita chips.<b><br /></b>

With St. Patrick's Day right around the corner, I thought I'd re-post one of my hubby's favorite recipes — authentic key lime pie.<br />
<br />
I would consider you one lucky devil if you've ever been to Key West and even luckier if you had a slice of authentic key lime pie while you were there! Whether you've been there or not — here's an authentic recipe that will take you there with each creamy bite of sweet tartness. Best part of this pie (aside from it being so delicious) is that it's extremely easy to make.<br />
<br />
<b>Ingredients</b><br />
2/3 cups key lime juice<br />
1/2 cup sour cream<br />
2 cans sweetend condensed milk<br />
Zest of 3 large limes<br />
Pinch of salt<br />

1 graham cracker crust</div>
Whipped cream topping<br />
<br />
<b>Directions</b><br />
1. Beat together key lime juice, sour cream, condensed milk, lime zest and salt.<br />
<br />
2. Pour into crust and bake on 350˚ for 10 mins. Let cool.<br />
<br />
3. Top with whipped cream poufs along the outside edge of the pie. Garnish with 1 circular lime slice in the center of the pie or place some curled lime zest on each slice.<br />
<br />
<b>Yield: </b>1 pie<br />

This roasted red pepper stromboli recipe is really easy, scrumptious and filling! Makes a great weeknight dinner or serve as an appetizer. I got the idea to add salami, ham and roasted red peppers to our usual pepperoni stromboli when I had these at a family member's house recently. The variety of meats adds a really rich and delicious flavor, however if you don't have all those meats on hand, using just pepperoni still tastes great. Just substitute with 3oz total of any kind of meat per stromboli.<br />
<br />
<b>Ingredients</b><br />
1 rolls of freezer dough<br />
1oz sliced pepperoni<br />
1oz sliced sliced ham (optional)<br />
1oz sliced salami (optional)<br />
3oz roasted red peppers (optional)<br />
3oz smoked provolone cheese<br />
1 tbsp basil, divided<br />
Shredded parmesan cheese<br />
<br />
<b>Dip:</b> Heated marinara sauce<br />

<b>Directions</b><br />
1. Roll out dough to form a rectangle approximately 18" x 12".<br />

2. Layer the center with pepperoni, ham, salami, roasted red peppers and provolone cheese then spinkle with 1/2 tbsp basil. Fold in one edge over the center. Repeat layering of pepperoni, ham, salami, roasted red peppers, provolone cheese and basil. Fold over remaining edge and sprinkle top with parmesan cheese.<br />

Oh my goodness, if you want to make the best french toast casserole, here's your recipe. I got the original recipe from a good friend who made this for us during a visit to her house. It's a variation of <a href="http://www.pillsbury.com/recipes/cinnamon-french-toast-bake/e710db37-7d40-4bba-b63e-e6e4ad81ae81" target="_blank">Pillsbury's Cinnamon Baked French Toast</a> recipe using canned Pillsbury Cinnamon Rolls. I added extra cinnamon, nutmeg and sugar; and reduced the eggs so it didn't get soggy of overly fluffy. Per my friend's recommendation, I left off the maple syrup because it's plenty sweet enough without it. That's all there is to this easy french toast casserole -- great for overnight guests or as a family treat.<br />

4. Sprinkle with pecans and then bake on 350˚ on a low rack for 35-40 minutes.<br />

5. Remove bake from oven. Warm icing from cinnamon rolls in microwave for 15 seconds; pour evenly over bake. Sprinkle with powdered sugar if desired.<br />

My bro-in-law is from Texas so it only makes sense that he'd be a fan and my sister-in-law, she just loves some Mexican food. She told me about cilantro paste which I had seen at the store before but hadn't tried. It tasted great in the chili, very fresh tasting and about 1/3 of the price of fresh too. Considering it's winter and all my fresh herbs are outside and frozen right now and will be until about June, I was sold. So I did buy some cilantro paste and recreated her chili so it's now on the books!<br />

Everyone remembers making pumpkin seeds when they were little but does anyone remember them tasting good? It always seemed like more of a novelty than a tasty treat. So, we decided to spice things up this weekend after we carved our jack-o-lanterns, and created this recipe in an attempt to bake some pumpkin seeds that were actually delicious. I love chicken cordon bleu. It pretty much has all my favorite things... chicken, rice, ham, onions, cheese... you catch my drift. I've made stuffed chicken cordon bleu before and it's delish but it's a little labor intensive to prepare. So, I'd seen recipes for chicken cordon bleu casserole on Pinterest and got really excited. However, after digging into the recipe, all of them were complicated. The whole point of a casserole is it's supposed to be easy, right? Well, as fate would have it, a friend offhandedly mention he'd made chicken cordon bleu casserole just the other night and he rattled off the recipe. It was easy enough for me to remember so I was sold. I doubled the recipe and made it for a recent family get-together and it was a big hit. The only changes to my friend's recipe I made were the addition of thyme and I used panko breadcrumbs instead of crushed saltines.<br />

4 cups cooked rice<br />
4 chicken breasts<br />
1/2 onion, diced<br />
4 tbsp butter<br />

1. Prepare rice and spread an even layer on the bottom of a 9x12 greased baking dish.<br />

2. Cook chicken breasts with onion in butter on stove over medium heat for 15 mins or until cooked thoroughly. Remove and cut chickn into bite-sized chunks. Leave onions and remaining juices in pan.<br />

3. Layer chicken piece evenly over rice.<br />

4. Slice ham into bite-sized chunks. Layer evenly over chicken.<br />
<br />
5. Layer cheese over top ham.<br />

6. Mix cream of chicken soup with chicken juices and onions leftover in the pan. Add thyme and mix thoroughly. Spread evenly over entire casserole.<br />

7. Layer Panko crumbs over top of casserole and cover with foil.<br />

8. Bake at 400˚ for 35 mins. Uncover and bake an additional 10-15mins.<br />

Here's another amazing recipe from my friend Heather. I had this stuffed manicotti at her house shortly after I met her, almost four years ago now, and I can still remember how melt-in-your-mouth delicious these were. I asked her for the recipe that night, she hand wrote it down for me and then I promptly lost it. So after getting to know her a little better, I decided it would be ok to ask for it a-gain and of course she happily gave it to me a-gain because she's awesome like that. So I <i>finally</i> recreated these last night to post and save this as one of my favorite recipes. I did use turkey instead of beef (which her original recipe calls for) so choose whichever you prefer. Turkey's just a bit healthier and I figured with all that cheese...<br />

2 boxes manicotti noodles<br />
2 cans spaghetti sauce<br />
1 lb turkey (or ground beef)<br />
2 (8oz) pkgs shredded mozzarella<br />
2lb ricotta cheese<br />
24oz cottage cheese<br />
3 (5oz) containers asiago, parmesan and romano cheese blend<br />
1 tsp minced garlic<br />
1 tsp dried basil<br />

"The best recipe on Pinterest"? That's what captions all over the place were saying about this recipe so how could I not try this? I was really surprised at how truly easy this was to make and that you could cook the tortellini in the Crock-Pot and have it not totally disintegrate. They held up just fine actually and the ravioli absorbed all the delicious flavors from the sausage and sauce. So, all in all, for the ease of making this dish it's pretty fantastic. Maybe not<i> the</i> best recipe on the entirety of Pinterest but I'd say it's the best Crock-Pot recipe I've tried so far. Directions<br />
1. Put tomatoes, water and condensed chicken stock into the Crock-Pot and stir together.<br />
<br />
2. Slice up cream cheese into small chucks and stir in with other ingredients in Crock-Pot.<br />
<br />
3. Cut up sausage into bite-size chunks. Place in Crock-Pot.<br />
<br />
4. Add frozen ravioli to Crock-Pot, fold in until thoroughly coated with sauce.<br />
<br />
5. Cook on low for 4 hours.<br />
<br />
6. Stir in spinach and cook for an additional 10 minutes then serve.<br />

I just tried this whipped pumpkin dip at a friend's house last week. It was so creamy and delicious, I kept going back for more and more... and more. I've since made it again and decided this one's going in my book of favorite fall recipes. It's incredibly easy to whip up, here's how:<br />

1 (8oz) container of cool whip<br />
1 (15oz) can pumpkin<br />
1 (1.34oz) package instant vanilla pudding<br />
A pinch of cinnamon, nutmeg, ginger and allspice<br />

Serve with: vanilla wafers, sliced apples or graham crackers.<br />

My kids are seriously crazy for pancakes. They ask — and sometimes demand them pretty much every weekend. When I am feeling generous (usually if they've given me enough time to have a cup of coffee first before they ask) I will make them their favorite breakfast: Mickey Mouse shaped pancakes with chocolate chips and sprinkles with maple syrup and whipped cream on top. Man, they are spoiled! Don't worry, I do make sure they get a good teeth-brushing in afterwards and veggies later in the day. So, yeah. We've tried a lot of different recipes we've found on the ol' internet. We've finally settled on this one — our favorite pancake recipe.<br />

<b>Ingredients</b><br />
1 1/2 cups all-purpose flour<br />
3 1/2 teaspoons baking powder<br />
1 teaspoon salt<br />
1 tablespoon white sugar<br />
1 1/4 cups buttermilk (or milk)<br />
1 egg<br />
3 tablespoons butter, melted<br />
1 tsp vanilla extract<br />

Extras: Chocolate chips, sprinkles, whipped cream and syrup<br />

I recently discovered that you can get jarred fresh basil in the herb section at the grocery store. Since my basil plants didn't do that well this year, this has come in handy to supplement my fresh picked basil when a recipe, such as this one, calls for a boatload of basil. This is an adaption of a <a href="http://hopeandjohnbasher.blogspot.com/2012/05/herb-crusted-chicken-in-basil-cream.html" target="_blank">Pinterest recipe</a> I experimented with. I altered it to simplify the ingredient list and also added a little heat! I also upped the amount of sauce so there's enough to cover the chicken and noodles.<br />

1 package egg noodles, cooked<br />

<b>Directions</b><br />
1. Place bread crumbs mixed with garlic bell pepper seasoning and milk in two separate bowls. Pound out chicken then dip in milk. Move to the bread crumb bowl and toss until thoroughly coated.<br />
<br />
2. In a large skillet, cook chicken in 4 tbsp butter over medium-low heat about 10-15 minutes depending on thickness and type of pan you're using. Transfer chicken to a heated toaster oven if you have one or cover loosely with foil to keep warm.<br />
<br />
3. Using the same skillet, sauté garlic in remaining tbsp butter for 1 minute. Add half & half and chicken bullion cubes, cheese mix, pimentos, basil, cayenne and pepper. Bring to a boil and stir until well blended. Reduce heat and simmer for 4 minutes, stirring occasionally.<br />
<br />
4. Serve chicken over egg noodles topped with sauce.<br />

1 large onion, chopped<br />
1 small jalapeño, deseeded and chopped<br />

1 tsp salt<br />
1 tbsp sugar<br />

1. In your Crock-pot, add roasted red peppers (do not drain), onion, garlic, jalapeño, tomatoes (do not drain), coconut milk, sugar, salt, cayenne pepper, coriander, ginger and water. Simmer on low for 4 hours.<br />

2. Strain out solids by pouring soup through a strainer into a bowl. Purée solids in a food processor or blender. Return to Crock-pot then spoon into bowls and serve warm.<br />

Yesterday my mother-in-law gave me a bag full of fresh-picked peaches, ripe and ready to eat. I wanted to make something with them out of stuff I had on hand. With my littlest one being sick this past weekend, I didn't feel up to a trip to the store for special ingredietns. That and my grocery budget doesn't replenish until the 1st of next month. So... since I pretty much always have enough stuff to whip up some bread, that's what I decided to do. I love spiced breads with veggies hidden inside. They are so much healthier than donuts, danishes, etc. yet still satisfy that sweet tooth. I think you're going to love this recipe. It's a great way to use up peaches that are on their last day.<br />
<br />
<b>Ingredients</b><br />
3 cups flour<br />
2 tsp baking soda<br />
1 tsp salt<br />
2 tsp baking power<br />
2 tsp cinnamon<br />
1/2 tsp nutmeg<br />
3/4 cup chopped pecans<br />
3 eggs<br />
1 1/2 cups sugar<br />
1 cup cooking oil<br />
2 tsp vanilla<br />
2 cups diced fresh peaches<br />

3. Fold in peaches, cream and carrots. Add dry ingredients until thoroughly moistened.<br />

4. Pour into 2 greased loaf pans. Bake at 350˚ for 1hr.<br />

It's year two of garden-fresh rhubarb. Unfortunately, we got a whole lot of nothing from our strawberry plants again this year but I'm guessing they just aren't getting enough sun. Thankfully, Walmart's produce didn't look look as bad as it normally does so I got a big box of strawberries because we have enough rhubarb for at least two more pies this year (We just have one rhubarb plant). Since rhubarb is really hard to find at stores around here, I guess I'm happy that the rhubarb does fine in the shade even if the strawberries aren't producing because I can always buy those. Still fresh-picked strawberries are so much better, especially if you grow them yourself! Ah well, maybe next year we'll try a sunnier spot.<br />

So, if you've never had rhubarb pie before you are in for a treat! I've found people either love it or hate it. It's got a sweet-tart taste. I'm not a big pie person because they tend to be overly sweet so this is right up my alley. I like the strawberries mixed with the rhubarb to give it some added flavor. I tried an all-rhubarb pie last year and thought it was kinda gross personally but some people said they did like it. Well, let me know what you think! It's very easy to make, even the lattice crust surprisingly. Here's how:<br />

<b>Ingredients</b><br />
1 cup sugar<br />
1/2 cup flour<br />
2 tbs tapioca<br />
2 1/2 cups chopped rhubarb<br />
3 1/2 cups chopped strawberries<br />
Juice from 1/2 lemon<br />
2 tbsp butter<br />
2 pie crusts<br />
1 egg yolk<br />
<br />
<b>Directions</b><br />
1. Mix together sugar, flour and tapioca. Add rhubarb and strawberries; toss to coat. Add lemon juice and toss.<br />
<br />
2. Place one pie crust in bottom of a shallow pie pan and add strawberry rhubarb mixture.<br />
<br />
3. Dart with butter.<br />

5. Loosely cover with foil and bake at 400˚ for 25 minutes. Remove foil and bake an additional 15 minutes or until top is golden brown.<br />

So, I've been trying different brown butter sauces for awhile now and can't say I'm overly impressed with any of them. Are they all kinda blah tasting or is it just me? After some experimentation of combining recipes I've collected, I finally came up with the best brown butter sage sauce recipe I've made to date. I do cheat and use fresh, packaged ravioli but you can of course get ambitious and <a href="http://allrecipes.com/howto/making-ravioli/" target="_blank">make your own ravioli</a>, too. I love this recipe because it's got a refreshingly different flavor yet it's easy enough to throw together on a weeknight.<br />

<b>Ingredients</b><br />
1 package fresh butternut squash ravioli<br />
<br />
<b>Sauce</b><br />
4 tablespoons butter<br />
1/4 tsp salt<br />

1/4 cup shredded Parmigiano-Reggiano </div>

<b>Directions</b></div>
1. Begin cooking ravioli as directed. Toast pine nuts until light golden brown.<br />

2. Melt butter over medium-low heat. Add garlic, salt and onions. Sauté onions until translucent. Keep an eye on the butter and remove from heat when little brown specs appear throughout.<br />
<br />
3. Pour brown butter sauce in a large bowl and add lemon juice, sage, and black pepper.<br />
<br />
4. Add pasta and Parmigiano-Reggiano and toss to coat.<br />
<br />
5. Top with toasted pine nuts and serve.<br />
<br />
Serves: 2-4<br />
